Onion and Thyme Chutney

Well, who would have thought sitting around eating too much turkey would be so tiring? Fortunately I have a back log of Christmas gift items to blog about so no need to worry about starting any new projects for a few days (assuming I can resist of course)!

I think homemade chutney makes a lovely gift and you can always tweak a recipe to your own tastes. I got this recipe from the book Jam, Jelly and Relish (which I love!) but I add extra thyme and sometimes extra port as well. I didn’t have the redcurrant jelly but replaced it with some plum jam instead.

I doubled up for this batch as I gave away several jars as part of Christmas gifts and I wanted plenty left over. It seemed like a good idea until I got all the onions peeled and ready for chopping… I cried a lot over this chutney! It was all worth it in the end though.
