Cheeky Cheesecakes

Ever have the urge to make something but don’t have quite the right ingredients?  I had a sudden need for cheesecake this week, but knew it wasn’t going to happen given my lack of digestive biscuits and double cream.  However, I decided to improvise with what I had and the result was a lot less effort than the real deal and just as yummy.

Cheesecakes

Makes 4 mini cheesecakes:

  • Half a packet of choc chip cookies
  • 1-2 oz Butter (melted)
  • 250g Marscapone Cheese
  • 1-2 oz Icing Sugar
  • 1tsp Vanilla Essence
  • 4(ish!) tbsp Homemade Strawberry Syrup (or use Jam)
  • Handful of raspberries (mine were frozen)

All I did was crush the biscuits and mix in the melted butter, and then press into the base of my ramekins.  Then I stirred the cheese, icing sugar and vanilla essence altogether and divided between the ramekins, smoothed the tops and put in the fridge to cool.  Then I heated the syrup and raspberries in a small pan mostly to make it all a bit runnier but also to defrost the raspberries.  Then I left this to cool a bit, poured over the cheesecakes and chilled until it was time for dessert!

Overall I think it worked out pretty well and I probably consumed way less calories than if I had made a proper one!
